Product of Spain
A pale gold sweet sherry with an intriguing pungent fresh apple and savoury scent, grapey crispness and a tangy refreshing green olive briny twist. Originally developed for the English market this sweeter style of Sherry has become one of the most popular fortified wines from Jerez bordering the Atlantic coast in the extreme South of Spain. The unassuming Palomino grape is transformed through ageing under a veil of flor (yeast) in the Solera system of seasoned American oak barrels at the renowned Sherry Bodegas Williams & Humbert (est. 1877). Here is takes on an intense pungency while the flor protects its colour. Cellar Master Paola Medina Sheldon, in partnership with M&S winemaker Sue Daniels then blends in a little grape must to give the luscious sweetness of this classic example. At its best enjoyed fresh, it will keep for 2 weeks in the fridge once open. Ideal sipped on its own or match with fruity desserts.
